What shirt goes best under a v-neck - collar visible or not?

A collared shirt is a must under a V-neck jumper, a regular t-shirt just doesn't look right. This can be an open collar for a more casual look, but adding a colourful tiebrings that extra bit of formality and sense of style.

Is a V-neck more formal than a crew neck?

This can depend on whether a tie is worn alongside the V-neck, as ordinarily there is little difference between the two when it comes to formality. A crewneck gives a more upright look, due to the jumper's collar being closer to the neck. Often with a crewneck, a shirt can only be seen poking out the top. A V-neck draws more attention to the shirt collar and tie, and if a tie is worn, this becomes the more formal choice.

How does a V-neck work under a jacket or blazer?

A V-neck works very well underneath a jacket. It can be an alternative choice to a waistcoat. Many gentlemen prefer to have a layer in-between a shirt and Jacket, particularly in colder months, because it can create a cleaner silhouette. A V-neck jumper keeps the tie pinned underneath the garment, yet the knot and colour can still be seen at the shirt collar.

Is a V-neck jumper suitable for shooting or field wear?

Yes, and is very common place. It is a great way to add a layer of warmth whilst retaining the formality required on a British shoot.
